  Holton Hollow Farm
 Holton Hollow Farm is located on a rolling hillside in Northeast Iredell County, North Carolina. I am the third generation to farm on the family land. In the early 1990’s I sold the herd of around 50 Jersey cows and got away from commercial dairy farming. Since then, to work out a small, specialized dairy that would fit with my facilities on the land has been a desire. I started looking into cheese making and took a few classes offered at N.C.S.U. I also read a great deal about cheeses and the regions they come from. I realized that it all starts and ends with the soil. I believe that healthy soil equals healthy animals, so there are no chemicals or pesticides on the pastures. With healthy soil and grass comes healthy, pure raw milk that I turn into an aged farmstead cheese that’s taste will change according to the season. The cheese is made all natural with no additives, preservatives, or artificial coloring. The cheese is aged for at least 60 days in a walk in cooler before it is ready to sell. I really hope you enjoy it!
